Welcome to the wonderful world of Sourdough, where the air is filled with the tantalizing aroma of freshly baked bread! Over the next few weeks, we're about to embark on a sourdough journey like no other – and this week we begin with our very own Sourdough Starter, and we have none other than our Executive Chef Leigh Evans as our guide.
Chef Leigh is renowned for creating culinary masterpieces, and he’s here to show you that making your own Sourdough is not just easy, but incredibly satisfying. So, roll up your sleeves, put on your apron, and let's get started!
Gather Your Supplies
Before we dive into our floury adventure, make sure you have the following items on hand:
- A clean bowl
- A grater
- A balloon whisk
- A silicone spatula
- A sterilized jar
Ingredients Matter
Now, let's talk about the heart and soul of your sourdough starter – the ingredients. You'll need:
- 100g of white bread flour, we love Shipton Mill Flour
- 100ml of water
- Half an apple
Method to the Madness
- Begin by adding the 100g of white bread flour into your clean bowl
- Gradually pour in the 100ml of water and mix everything together. Chef Leigh recommends using a balloon whisk for this step to ensure a smooth consistency
- Now, here's where the magic happens – grate half an apple into the flour and water mixture. The apple adds a touch of sweetness and provides natural yeast for your starter.
- Give it a good mix to combine all the elements
Transfer this mixture into your sterilized jar. Make sure the jar is clean and free from any residue to avoid unwanted contamination.
Feeding Your Starter
Your Sourdough Starter is like a living organism; it needs to be fed to thrive! Chef Leigh suggests feeding it every 12 hours. Here's how:
- Discard half of your starter.
- Replace the discarded portion with 50g of flour and 50ml of water.
- Mix it well.
Repeat this feeding process every 12 hours, and you'll see your starter come to life, bubbling and fermenting away.
